About this recipe
Gooseberries are a delicious fruit available from June until July. They are very tart, but this is a great way to sweeten them. Eat them on top of ice cream or your favorite dessert. My kids can’t get enough of them!
Instructions
- Fill a jar with fresh or frozen gooseberries.
- Fill the jar with apple cider vinegar until gooseberries are fully submerged.
- Let sit for 4-5 days.
- Strain vinegar off.
- Pack the gooseberries back into the jar, but layer them with sugar.
- Let sit for 11 days.
- Strain into a bowl to save the syrup.
- Pack the gooseberries into a jar, then pour the syrup over the top until full.

Ozarks Foragers Cooking Guide
I am writing a comprehensive cookbook about foraging and cooking Ozarks foraged foods. As an experienced wild foods chef with almost 15 years of experience cooking, I have decided it is time to share my accumulated knowledge with other aspiring wild foods chefs. This book will take a deep dive into foraging, fermenting, and cooking Ozarks wild foods.
This fundraiser will help raise the funds for photography, graphics, editing, and more. Thank you for your help in making this dream become a reality!
