Horchata has a long history going back to Possibley Egypt, but in modern times it is a South America drink mainly found in Mexico. It is made by simmering milk with white rice and spices like cinnamon and vanilla. It has been drank for 100’s of years. It is also becoming more popular here in the U.S. I find that mulberry’s bring notes of chocolate and coffee along with tobacco when you cook with it. Making it a perfect addition to horchata. Reduce this recipe by half for smaller batches. This is one drink sure to impress your guest, nice and refreshing on a summer evening. Perfect served with a slice of cake. Enjoy!”

Ingredients

  • 3 cups Fresh Mulberry 4 cups of Dehydrated
  • 4 cups White Rice
  • 1 gallons Whole Milk
  • 2 Cinnamon Sticks
  • 6 Whole Clove
  • 1 tsp Kosher Salt
  • 2 cups Brown Sugar
  • 1 cup Mugolio (Optional)

Instructions

Combine all ingredients in a cast iron pot.

    Bring to a simmer.

      Turn down to as low as possible for 1 hour, stirring occasionally.

        Let sit for 3 hours.

          Strain.

            Let chill.

              Serve with a dash of cinnamon.
