Sprucetip and Almond Candied Woods Ear Mushroom

Ingredients
- 3 cups Woods Ear Mushrooms
- 4 cups Water
- 1 tsp Almond Extract
- -1/2 + 1/4 cup Sprucetip sugar see recipe
Instructions
- Dehydrate sliced woods ear mushroom.
- Bring water , sugar, and almond extract to a boil.
- Place dehydrated woods ear mushroom in with liquid and bring to a simmer for 15-20 minutes.
- Strain and let woods ear dry on a towel for 30 minutes.
- Toss in sugar.
- Place bag in dehydrated for 6 hours at 155 degrees.
- Lightly toss in 2 tablespoons of Sprucetip sugar.
- Store in a jar with paper towel at bottom.
